Beauregard Sweet Potatoes are a unique variety with brown skin and rich orange flesh that intensifies when cooked. Aside from its unique bold color, Beauregard Sweet Potatoes contain a high level of antioxidants, making them unusually healthy and nutritious. These sweet potatoes offer a well balanced sweetness, and are also an excellent source of vitamin C and fiber. Exclusively grown in Egypt and Spain. Available for retail and processing.

Oven cooking: Coat potato in olive oil or butter, wrap in foil and bake for 1 to 2 hours at 350 degrees.
The dense flesh of sweet potato takes a bit longer to cook than other potatoes, but worth the wait!
Microwave cooking: Wrap in a damp paper towel and microwave on high for 5 to 6 minutes. Can also be steamed, boiled, roasted or fried (note that the drier texture of this potato lends better to high-moisture cooking methods).
Excellent source of vitamin C and fiber (The skin is edible, too!). Vibrantly orange from antioxidants. Sweet potatoes have a low glycemic index when boiled.
Choose a product that is firm, with minimal scarring, sprouting or excessive skinning.
